I am reading a lot of stuff and new fad for so called organic food means free from the pesticides residue etc. How ever no mention is their to cook them to retain their prime virtue.


i am keen to know how to cook an organically fed fish as curry in Bango style.

Hello raje,


well good question, lemme first write some little more details about organic veg/food grains/NV food stuff Fish etc.


1.They donot use any chemical fertilizers or pesticides during the cultivation.


2.They invariably use cowdung,soya-khali, vermiculture as manure n natural pesticides made from Neem( patti n seeds khali, crushed neem seeds, oil removed remains Wink, Gomutra, Honey( 2-5 %) etc.


3.Such crops n vegetables have natural n intense taste, rich aroma, & are free from any chemicals.The growth is not inflated to increase volumes( for money). Thus whoever consumes have no side-effects of chemical remains or residues. we Indians had peaked hights in such productions originally untill even 30-40 years ago( now we are re-taught by westerners), it used to be called Rishi-Krishi( Rushi-Krushi in marathi).There are groups in Maharashtra promoting this Rishi Krishi concept now again.


4.This also keeps the land fertile forever, unlike chemical fertilizers which increase the output temporarily, but make the land barren after 25-30 years of use.


Now coming to cooking techniques to keep the subtle nutrients( prime virtues) intact of anything( org. or inorg.) you cook(esp vegetables).


1.Wash thoroughly( keep them in water for 2-3 hrs, rinse in aqua water later, dry them with clean turkish napkin) all the veg/stuff before cutting, never wash after cutting it.wherever possible avoid knife, just break it using finger.Like cauli flower, beans, cabbage, carrot, Radish even onion, can be broken/peeled or torn.  


2.Cut the vegetables just before use, for cooking.However fish is to be marinated n kept for atleast 2-3 hrs. in deep-freezer.

3.Always cook them in pressure cooker, with oil n spices as less as possible.Add salt always at last stage only( after complete cooking) n leave it to absorb fully later for 10-15 mins.


sorry cant give any recipe I mean bango recipe..

nice discussion ere folks!


people with a greater propensity for reasoning take to healthy food habits i think. by n large most of us eat only for excitement and titillation - never for nutrition. over the years i kinda picked up a few habits or principles by which to prepare food which i share with you here. i must say, thoh, the stuff from mohanji ere is good - he's enunciated sum excellent points to healthy food preparations - athough theze are age old practices in indian households. my additions:


- mother nature has given us everything that is perfect for us - the way it is best suited to be absorbed into the body. thus, any deviation from primary products is not the way it is suited for healthy consumption. this wud include - processed foods (cans, frozen, packaged, etc). for this reason butter is superior to margarine (not to mention trans fats et al)


- food should be cooked on low heat. the quicker food cooks, the less nurients it retains. oils and fats, especially, turn toxic in high heat.


- vegetables, by n large, shud b semi cooked, or eaten even raw. the carbohydrate veggies such as potato, needs sum cooking; most other tings must b cukd minimally, including NV.
